It’s positioned brilliantly on the island of Anguilla because there is really nothing like it around, so repeat visitors who like the more traditional Caribbean charm of properties like Cap Juluca or Cuisinart will not feel like the competition has moved in to conquer – although I’m sure many will be wooed by her charm – I know I was!

One of my favourite hotels in the world is The Caves in Negril, Jamaica. It’s a perfect place for an all-property buyout (think: total privacy and a resort all to yourself!) and a romantic, unique wedding choice for couples seeking something a bit different than the norm. The Caves is part of the Island Outpost family of hotels and it’s charming, quirky and the farthest thing from mass market.

Perched up on the cliffs of Negril, just past famous Seven Mile Beach, this property is small and intimate. Potential clients always ask the same question: “Will I miss the beach?” as this property isn’t directly on a sandy beach. Without hesitation, I always say not at all. There are so many nooks and crannies that lead you down to the ocean via stone stairs, and the sea is like a big, bright blue swimming pool. Pool ladders are attached to the rocks for easy access to dip in the ocean, and if you have the guts, take the plunge and dive off the cliff. I’m a big suck, and didn’t do it (maybe afraid of heights), but if you ever get the chance, go for it!!

Just over a month ago, we returned from the Ritz Carlton in Grand Cayman from a luxury wedding business symposium called Engage!09 (hosted by the fabulous Rebecca Grinnals and Katherine Arce), and spent a few days among some of the wedding industry “greats” like designer extraordinaire, Preston Bailey; cake guru, Sylvia Weinstock; and the editorial director of Martha Stewart Weddings, Darcy Miller (to only name a few of the talented attendees).

It was a great opportunity to stop and think about the direction that destination weddings are taking, and it’s certainly a positive one. Carly Roney, founder of The Knot, reported that 20 per cent of all weddings are now destination weddings! Great news for all you couples considering this route—it’s a growing industry, which means more and more options will become available. Having worked on hundreds of LUXE destination weddings, I’m so excited with the direction and sophistication being awarded to this segment of the wedding world.

If you are looking for a new wedding hot spot, consider Grand Cayman. The island is friendly, safe, gorgeous, and is surrounded by some incredible beaches.
